#35: Coffee Roasted Chicken

Coffee.. I am so in love with it that I even add it to my chicken! Haha! you may think that this will taste funny but really, what coffee adds to this is the smoky flavor without the actual carbon crust on the chicken. This is so delicious and simple, you can almost do this even if you don't have any cooking experience at all. And, it adds a truck load of pogi/ popularity points if you serve this to your friends. Little do they know that it is made of only 5 ingredients. 
After you pop it in the oven, you can go ahead and leave it roasting itself to glory. But of course, like I mentioned in a previous entry, if you're ever going to leave something cooking, set an alarm. 

Coffee Roasted Chicken

Featured ingredient: You guessed it right! COFFEE!!!

Ingredients:
1 whole chicken, about 1 kilo, dressed with the wings and legs tied with a string
1 1/2 tbsps salt
1 tsp pepper
4 cloves garlic crushed finely
1 tbsp instant coffee
1 tbsp olive, melted butter or cooking oil

How To:
1. Pat the chicken dry with a kitchen paper towel. 
2. Mix the rest of the ingredients together then rub it inside and outside the chicken. Let it marinade for 15 to 30 minutes.
3. Pop it in a 200C oven and let it cook for 40 minutes. Now there are many ways to skin the cat:
     a. If your oven has a rotisserie, then congratulations! You finally have a chance to use it! Set up your whole chicken in the skewer and let it roast for 40 minutes. Make sure that you have placed an aluminum pan under it to catch all the juice. Some ovens have a roast mode. This means you fire up the upper part, not the lower part. If it doesn't have that feature, then simply fire up the oven and proceed. ;-D
     b. If it is a regular oven, place the chicken in an oven safe dish. Cook for 40 minutes, turning the chicken every 10 minutes.
     c. You can also turbo roast this and I think turbo roasters do a quicker job. Perhaps 20 to 30 minutes will do here.
     d. Now IF YOU DON'T HAVE AN OVEN, don't despair. Get your heavy pot (in the Philippines your saingan), grease the bottom a bit and place on very low fire. Place the chicken inside and cook for 60 minutes, turning at least twice. Just be careful not to break the skin.
4. Remove chicken from heat and let stand. You will notice that there are lots of caramelized stuff sticking to the drippings pan or the bottom of of your casserole. Add 1/4 cup of water or broth to this and place on low fire. Mix and scrape it until all the yummy bits are off the pan and into the sauce. Let reduce for 2 minutes then pour over your chicken.

Now you can see that I have vegetables hanging out with my chicken here. Well, if you have vegetables lying around, you can give them a hitch and place these chopped veggies on your drippings pan so they will be roasted with the chicken. Cauliflower, marble potatoes, beans, carrots, peas, asparagus and white onions are good choices for this. Now don't they look immaculate together?
