Now we have come to the second installment of our cucumber festival. The first couple of recipes are quite common but these two here are more adventurous.
Tzatziki's Long Lost Pinoy Brother
Now where getting somewhere! And that somwhere is Greece. This is a traditional Greek dip but we will try to make it more down to earth, ok? Strictly, it should be made with Greek yogurt which is richer than the yogurt we know. But hey, yogurt is already a bit pricey here so I guess we can make do with that. It's up to you if you want to scour the international aisle in your supermarket and find the real thing. :-D
2 medium cucumbers, peeled, seeded and cubed
1/2 cup yogurt
1/4 cup cream
2 tsps calamansi juice
3 cloves of garlic, minced finely
2 tsps fresh dill, chopped finely
1 tbsp olive oil (extra-virgin will be better)
1 tsp salt
pepper to taste
Guess what? Mix all ingredients together except for cucumber. Just make sure that all the flavors have gotten to know each other. When they are already friends, then fold in the cucumbers. Yummy with the simple fried chicken or the rich Angus beef T-bone steak! *faint*

2 cups fresh or canned pineapples (drained if canned)
2 cups cucumber, peeled, seeded and cubed
1/2 cup of mayonnaise
1/2 tsp salt
1/4 tsp pepper
This gets even simpler. Just toss them all together and serve chilled! Yipee!
So, these 4 easy recipes should give you enough side dishes to keep your family looking forward to mealtimes. Dining in your home doesn't have to be bland, dry or predictable.
